MEAT

Straight from the source.

Each of the whole animals we butcher at the shop come from small family farms in New York state and Pennsylvania. Our beef and lamb are grass-fed and -finished, our pork and chickens are heritage breeds, and everything we sell is both hormone- and antibiotic-free. Each animal goes directly from the farm to local, low-volume, humane slaughterhouses and arrives at our door within just a few days. That ensures we provide not only the highest quality, but also the freshest product.

BEEF

Each of the cattle we purchase graze rotationally on lush grass (that isn’t sprayed or fertilized with chemicals). After processing, every carcass hangs at the slaughterhouse for a minimum of 10 days—meaning that even our most inexpensive cuts are dry-aged for extra flavor.

PORK

To ensure well-marbled, juicy pork, we only source mature Berkshire pigs with a hanging weight of 200+ lbs after slaughter. Thanks to the consistent muscle structure and slow maturation of this heritage breed, there’s quite literally no comparison between the flavor of our pork and standard grocery store chops.

LAMB

After dry-aging at the slaughterhouse for a week, our lambs arrive whole and are promptly broken down at the shop. We opt for slightly older animals (mutton or hogget) and hair breeds (rather than wool breeds), which boast a richer, less gamey flavor and better marbling than younger animals.

POULTRY

We offer both fully pastured and free-range chicken at The Meat Hook, and you can also place special orders for ducks, capon, cornish hen and other fresh poultry. These heritage breed birds are blast-chilled after processing (instead of water-chilled) to ensure you get more meat for your money.

PRODUCE & GROCERY

A mix of highbrow and lowbrow—just like us.

All of our produce is sourced from organic farms across the Tristate area and Pennsylvania, but that doesn’t stop us from stocking iconic brands like Heinz 57. From chef favorites (like Kewpie Mayo), to Martin’s potato rolls, you’ll find small-batch, artisan goods alongside the classics we can’t live without.

Sourced by our friends at Saxelby Cheesemongers, our selection of domestic cheese spans a wide range of American and European styles. Whether raw milk or pasteurized, mild or funky, we’re happy to walk you through our favorite tasting notes and find something perfect for your palate.

Dockside, delivered to Graham Ave.

While we don’t offer fish at The Meat Hook, our Williamsburg shop hosts a weekly seafood CSA through Mermaid’s Garden each Thursday from 5-7pm.
